Zingy Prawn Tortillas

This fresh and tasty tortilla recipe makes for the perfect light lunch, especially on a warm summers day. A quick, healthy and delicious alternative to your typical day-to-day sandwich. 

Serves 2

3 limes 

1 cup chopped seeded tomato 

1 cup diced peeled avocado 

1 cup chopped iceberg lettuce 

1/2 cup chopped fresh cilantro 

3/4 teaspoon salt 

1/4 teaspoon black pepper 

3 garlic cloves, minced 

450gms cooked peeled prawns 

12 (6-inch) corn tortillas 



  1. Finely grate the rind from the limes to measure 1 tablespoon then juice the limes to measure 1/4 cup.  
  2. Place the rind and juice in a large bowl, add the prawns, avocado, tomato and the remaining ingredients, toss well to combine, cover and chill for 15 minutes, stirring occasionally. 
  3. Heat the tortillas then spoon about 1/2 cup of the prawn mixture down the centre of each tortilla and fold in half. Repeat for the rest.  


Serve immediately and enjoy!
