Mexican Bean Chilli
Batch recipe serves 10
Ingredients:
4 x chopped tomatoes
2 x red kidney beans
2 x haricot beans
2 x pinto beans
2 x black eyed beans
1 x butter beans
1 x Sweetcorn
2 x red peppers
3 x cloves garlic
2 x large white onion
4 tbs tomato purée
2 Veg stock cubes
3 tsp Tumeric
1 tsp Cayenne pepper
3 tsp Paprika
Method:
1. Fry the onions until slightly brown
2. Add in the spices and garlic, stirring regularly
3. Add all other ingredients and simmer gently for 20 minutes
4. Season to taste with salt & pepper
5. Serve with sweet potatoe wedges or rice, spinach, tomato, red onion salad and a small dollop of fresh sour cream.
